Bethany Whymark – 8.8
Nose: A beautiful raspberry nose – just like a very seed-heavy raspberry conserve, layered thick on top of fruit scones with a dollop of clotted cream.
Palate: The texture is silky and light. The raspberry notes are less jammy and more juicy, and carry some of the fruit’s natural tartness. Herbal notes underneath.
Finish: Raspberry jam tarts with unsweetened, just-cooked pastry. Its length comes from the flavour rather than any viscosity in the mouthfeel.
Comments: Brilliantly executed – I could sip this for days. If you’re feeling decadent, pop a splash in a glass of Champagne.
Phoebe Calver – 8.7
Nose: Oh hello. Like the rich and jammy filling of a homemade Victoria sponge. Mixed in with a layer of cream cheese vanilla frosting.
Palate: The raspberry is heading more towards a compote, with a little sage sprinkled in, perhaps on top of a panna cotta.
Finish: Lingering raspberry notes, with complexity and depth – not sickly at all.
Comments: I’ll be all over this in a Bramble cocktail, I think it would make a really fun addition as we cling on to the last dregs of summer.
