Phoebe Calver – 8.3
Nose: All sweet and smoky, bringing pork chops on a barbeque, followed by rich earthy peaty smoked raisins and vanilla cream.
Palate: The sweet smokiness continues here, but with more of an earthy dry hint, then caramel drizzle over dark fruit cake and cinnamon spice.
Finish: Lingering dried fruits and sweet whisps of smoke on the medium finish.
Comments: Very enjoyable character and complexity here, with just the right balance of the sweet and smoky profiles.
Christopher Coates – 7.7
Nose: Blossom honey, peaches in syrup, and subtle lychee. Wet earth, pencil shavings and new leather. Gingerbread dusted with nutmeg, sticky fudge and deep-fried banana fritter.
Palate: Medium. Dried apple pieces, cashew and honey-glazed granola. Subtle peat. Honey-soaked sponge cake with whipped cream and cinnamon. Some white grape.
Finish: Medium. On honey sponge.
Comments: A Russian honey cake, distilled.
